Caramelized Onion Meatball Pizza (pictured above)

Rustic and hearty, this is sure to be a crowd favorite!

Makes 4 servings


2 tablespoons unsalted butter

1 bunch asparagus, sliced

1 teaspoon salt

Freshly ground pepper, to taste

1 large pre-cooked gluten-free pizza shell or Chebe Pizza Crust Mix

1 pack Aidells Caramelized Onion Meatballs, sliced

1/2 cup goat cheese, crumbled

1/2 cup figs, sliced

2 tablespoons olive oil

1 bunch arugula, washed and dried


1. Preheat oven to 450 degrees.

2. Melt the butter in a large, heavy-bottomed skillet. Add the sliced figs and cook slowly over low heat, turning occasionally until lightly caramelized, about 10 minutes. Set aside.

3. If using the Chebe Pizza Crust Mix, prepare as directed and roll out to rectangle, as shown in photo. Brush pizza shell or crust with olive oil and arrange the meatball slices and asparagus on the pizza shell. Finish with cheese, figs, and arugula. Bake for 10–15 minutes. Cut into pieces and serve.


Mini Sausage Rolls

These small bites will add big smiles to game day!

Makes 35 servings







1 homemade recipe of gluten-free puff pastry or

2 packages of Chebe Focaccia Mix

1/4 cup Dijon mustard

1 pack Aidells Chicken & Apple Mini’s

or 12 oz. Chicken & Apple Dinner Links, cut into 1/2-inch rounds

1 egg

1 tablespoon water



1. Preheat oven to 350 degrees.

2. Prepare your own recipe of gluten-free puff pastry or Chebe Focaccia Mix, as directed on package.

3. With gluten-free flour, lightly dust a work surface and gently roll out dough to smooth out. Cut the dough into 4 equal squares. Refrigerate 3 of the squares, separated by parchment paper, while you work on the first one. Cut each square into approximately 10 long, thin triangles.

4. Brush 1 triangle with Dijon mustard, place a Chicken Apple Mini Sausage at the wide end of the triangle and roll up the sausage upward, wrapping the pastry around it. Place the sausage roll on a baking sheet, seam side down. Repeat until all the triangles are filled and rolled. Then repeat with all squares to make remaining sausage rolls.

5. Whisk together the egg and water. Lightly brush each sausage roll with the egg mixture.

6. Bake for 10 to 15 minutes until the dough is and browned.


Bean Soup with Aidells Sausage

When the weather starts to cool down, warm up with this flavorful soup.










2 cups navy beans, soaked in water overnight and drained

2 tablespoons olive oil

4 stalks of celery

4 large carrots, peeled and sliced

1 large onion, chopped

2 cloves garlic, chopped

4 links Aidells Chicken & Apple Sausage, cut into 1/2-inch slices

9 cups chicken stock or broth

2 teaspoons dried thyme, crushed

2 bay leaves

Salt and freshly ground black pepper, to taste



1. In a large soup, over medium-high heat, add the oil and sauté the celery, carrots, onion, and garlic until beginning to soften, about 5-8 minutes.

2. Add the soaked beans, sausage, stock, thyme, and bay leaves. Bring to a boil; reduce the heat, then cover and simmer until the beans are soft, about 1 to 1 1/2 hours. Removed and discard the bay leaves.

3. Using the back of a wooden spoon, mash some of the beans against the side of the pot to slightly thicken the soup. Season to taste with salt and pepper. Enjoy!



Habanero Sausage Burgers with Jack Cheese

You might want to double the recipe, these burgers are so good, guests will want seconds!

Makes 6 servings







1/2 cup gluten-free mayonnaise

2 teaspoons lime zest, grated

1 tablespoon minced canned chipotle chilies in adobo sauce

1 teaspoon fresh lime juice

Salt, to taste

4 Aidells Habanero & Green Chile Sausage Links, cut into 1/2-inch cubes

2  1/2 lbs. ground beef (15% fat) or turkey (not lean)

4 green onions, chopped

2 teaspoons ground black pepper

6 gluten-free Udi’s hamburger buns

5 canned mild green chiles

6 ounces Monterey cheese, grated



1. In a small bowl, stir together the mayonnaise, lime zest, chipotle chilies, and lime juice. Season to taste with salt.

2. Finely chop the sausage in a food processor. Transfer to a large bowl. Add the ground meat, onions, salt, and pepper. Stir just until blended. Form into six patties.

3. Prepare barbecue or grill for medium-high heat. Grill hamburgers to desired doneness, about 5 minutes per side for medium-rare. If you are using ground turkey, grill until fully cooked about 8-10 minutes per side. In the last minute of cooking time, top each burger with cheese. Grill the buns until golden.

4. Spread one side of each bun with the mayonnaise. Place a burger on each bottom half and top with a green chile. Cover with top halves of buns and serve.



Trio of Tasty Dipping Sauces

These great dipping sauces are the perfect snack for every game-day get-together! Try paired with Aidells Spicy Mango with Jalapeño meatballs, Caramelized Onion Meatballs, and Italian Style with Mozzarella Cheese Meatballs.






Teriyaki Dipping Sauce


1 cup San-J Tamari Gluten-Free Soy Sauce

1/2 cup brown sugar

1/2 cup crushed pineapple

2 cloves garlic, minced

1 teaspoon ginger, ground

2 teaspoons corn starch (mixed with 2 tablespoons of water)



1. Whisk everything together; bring to a boil.

2. Serve warm.


Sweet Chili Dipping Sauce


1/2 cup rice vinegar

1/3 cup sugar

1 teaspoon garlic, minced

1 teaspoon ginger root, grated

1 tablespoon gluten-free Sriracha sauce

1/2 teaspoon chili flakes

2 tablespoons cornstarch



1. Combine vinegar, sugar, garlic, ginger, Sriracha, and chili flakes in a small pot and bring to a simmer over medium heat; cook for 5-7 minutes, or until mixture begins to turn syrupy, then reduce heat to low.

2. Mix cornstarch in 1/4 cup of water and stir into sauce. Bring back up to a simmer; remove from heat and serve.


Mango Dipping Sauce


2 mangos

1 tablespoon honey

1 tablespoon rice wine vinegar

1 lime, juiced

1 tablespoon pineapple juice

1 pinch of salt

1 jalapeno pepper, minced

1 tablespoon fresh herbs



1. Puree mangos, honey, vinegar, lime juice, pineapple juice, and salt in a food processor or blender until smooth; add remaining ingredients into food processor and blend.

2. Sauce can be refrigerated in an airtight glass container for up to 1 day. Serve at room temperature.
