Chicken Pesto Skewers

Makes 4 servings
A great summer cook-out recipe. It’s fast, easy and fun for the entire family to put together.



what you need

  • 1/3 cup KRAFT Italian Vinaigrette Dressing
  • 3 cups tightly packed fresh basil
  • 1/3 cup KRAFT Grated Parmesan Cheese
  • 1 lb. boneless skinless chicken breasts, cut into 1-1/2-inch pieces
  • 2 cups cherry tomatoes

make it

  1. HEAT grill to medium-high heat.
  2. BLEND dressing, basil and cheese in blender until smooth. Toss 1/4 cup pesto with combined chicken and tomatoes. Refrigerate or freeze remaining 1/2 cup pesto for another use.
  3. THREAD chicken and tomatoes alternately onto skewers.
  4. GRILL 5 minutes on each side or until chicken is done.



Pineapple Chicken Kabobs

Makes 4 servings

Pineapple, peppers and chicken basted in a balsamic vinaigrette make for kabobs with big summer flavor that are low-fat, low-sodium, and low in calories.



what you need

  • 1 lb. boneless skinless chicken breasts, cut into 1-1/2-inch pieces
  • 1 each red and green pepper, cut into 1-1/2-inch pieces
  • 1 fresh pineapple, cut into 1-1/2-inch chunks
  • 1/2 cup KRAFT Lite Balsamic Vinaigrette Dressing, divided

make it

  1. THREAD chicken, peppers and pineapple alternately onto 4 skewers.
  2. RESERVE 1/4 cup dressing; brush kabobs with remaining dressing. Refrigerate 1 hour.
  3. HEAT grill to medium heat. Grill kabobs 12 to 15 min. or until chicken is done, turning occasionally and brushing with reserved dressing.




Santa Fe Grilled Chicken Kabobs

Makes 4 servings

Light for summer but hearty and full of flavor, these kabobs are dressed to impress on a bed of long-grain brown rice.



what you need

  • 1 lb. boneless skinless chicken breasts, cut into 1-1/2-inch cubes
  • 1/2 lb. fresh mushrooms
  • 1 small each zucchini and yellow squash, cut into 1-inch-thick slices
  • 1 small red pepper, cut into 1-inch pieces
  • 1/2 red onion, cut into 1-inch chunks
  • 3/4 cup PHILADELPHIA Santa Fe Blend Cooking Crème
  • 2 Tbsp. milk
  • 2 cups hot cooked long-grain brown rice

make it

  1. HEAT grill to medium heat.
  2. THREAD chicken and vegetables alternately onto 4 skewers.
  3. GRILL 10 to 15 minutes or until chicken is done, turning occasionally. Meanwhile, cook and stir cooking crème and milk in saucepan on medium heat 2 to 3 minutes or until heated through.
  4. SPOON rice onto plates; top with kabobs and sauce.




Pineapple, Banana & Strawberry Kabobs

Dipped in Dark Chocolate
Makes 8 kabobs

Quick and so easy…but they sure look pretty! These tasty treats are sure to be a huge hit at your next get-together!



what you need

  • 1 medium pineapple, cut into 1-inch chunks
  • 4 medium bananas, sliced into 1-inch pieces
  • 12 strawberries, stems cut off
  • 1 12-ounce bag gluten-free dark chocolate chips

make it

  1. MELT chocolate chips in a microwave-sauce bowl and microwave on Low until the chips just start to melt, about 2 – 2 1/2 minutes. Stir the chocolate chips and microwave on Low for another 20 seconds.
  2. DIP fruit chunks into chocolate to coat about 1/2 way. Place on wax paper to set, about 30 minutes.
  3. STRING fruit pieces onto skewers, rotating fruits.




Brown Sugar Glazed Pineapple & Banana Bits Kabobs

with Vanilla Bean Ice Cream
Makes 4 servings

Refreshing and easy, this is the perfect desert for any meal!



what you need

  • 4 medium to ripe bananas, cut into 1-inch chunks
  • 1 medium pineapple, cut into 1-inch chunks
  • 3/4 cup light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup, plus 1 tablespoon butter, melted
  • 4 tablespoons fresh lime juice
  • Vanilla Bean Ice Cream
  • Fresh mint leaves

make it

  1. PREHEAT the broiler. Place an oven rack below boiler. Butter a 9 x 11 glass baking dish.
  2. MIX together brown sugar, cinnamon, and nutmeg in small bowl. Set aside.
  3. PLACE fruit in baking dish and sprinkle with sugar mixture. Drizzle melted butter over fruit, followed by 2 tablespoons of the lime juice.
  4. BROIL the fruit until the sauce starts bubbling, about 4 minutes.
  5. STRING fruit through skewers and place in bowl with 1/2 cup vanilla bean ice cream. Drizzle 1/2 teaspoon of lime juice over fruit and ice cream in each bowl. Top each bowl with mint leaves.
