 When I went to purchase some chickpea flour a few days ago, the clerk asked me if I was going to make cookies with it (which I was not); however, my curiosity was piqued and once I got home I researched it and found a recipe using chickpea flour, which I then personalized. They really are delicious and much like shortbread cookies.


1 cup butter or margarine

1 cup powdered sugar

1 egg yolk

1 teaspoon ground cardamom

2 cups chickpea flour


1. Beat butter and powdered sugar together until creamy. Add egg yolk and cardamom.

2. Knead in the chickpea flour until smooth. The dough will be crumbly so it needs to be well kneaded. For more of a shortbread texture, omit the egg yolk.

3. Pinch off small pieces of dough and roll them into balls between the palms of your hands. Place on lightly greased baking sheet and press the back of a fork onto the cookies to give a ripple effect.

4. Bake at 300°F for about 30 minutes.
