Green Velvet Cupcakes

Makes 24 servings

Green Velvet Cupcakes topped with fluffy white frosting…the perfect way to add a wee bit o’ Irish on St. Patty’s Day.

what you need

1 package (2-layer size) white gluten-free cake mix

2 ounces BAKER’S Semi-Sweet Chocolate, melted

1 tablespoon green food coloring

4 ounces (1/2 of 8-ounce package) PHILADELPHIA Cream Cheese, softened

1 jar (7 ounces) JET-PUFFED Marshmallow Creme

1teaspoon vanilla

1 tub  (8 ounces) COOL WHIP Whipped Topping, thawed

1. Heat oven to 350°F.

2. Prepare and bake cake batter as directed on package for 24 cupcakes, blending melted chocolate and food coloring into batter before spooning into prepared muffin cups. Cool completely.

3. Beat cream cheese, marshmallow creme, and vanilla in large bowl with mixer until blended. Add COOL WHIP; beat just until blended.

4. Spoon COOL WHIP mixture into resalable plastic bag. Cut corner off one bottom corner of bag; use to pipe COOL WHIP mixture onto tops of cupcakes.

 

 

Bit-of-Irish Cheesecake

Makes 16 servings

Rich and creamy, this smooth cheesecake will wow your guests!

what you need

1 1/2 cups  finely chopped PLANTERS Pecans

2 tablespoons sugar

3 tablespoons butter or margarine, melted

4 packages (8 ounces each) PHILADELPHIA Cream Cheese, softened

1 cup sugar

3 tablespoons gluten-free flour

1 cup BREAKSTONE’S or KNUDSEN Sour Cream

1/4 cup Irish cream liqueur

4 eggs

 

make it

1. Heat oven to 325°F.

2. Mix nuts, 2 tablespoons sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 minutes.

3. Beat cream cheese, 1 cup sugar, and flour in large bowl with mixer until blended. Add sour cream and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

4. Bake 1 hour 5 minutes, or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.

 

 

Chocolate-Mint Parfait

Makes 6 servings

Chocolate pudding with a hint of mint, then layered with green tinted whipped topping, makes an absolutely elegant dessert.

what you need

1 package (3.9 ounces) JELL-O Chocolate Instant Pudding

2 cups cold milk

1/4 teaspoon peppermint extract

1 cup thawed COOL WHIP Whipped Topping

6 drops green food coloring

 

make it

1. Beat pudding mix, milk, and extract with whisk 2 minutes.

2. Whisk COOL WHIP and food coloring until well blended.

3. Layer pudding alternately with COOL WHIP in 6 parfait glasses. Refrigerate 15 minutes.

 

Grasshopper Pudding Pie

Makes 8 servings

Fluffy and minty with a dash of chocolate, you’ll be hopping over for seconds!

what you need

4 gluten-free chocolate wafer cookies, divided

1 package (1 ounce) JELL-O Pistachio Flavor Fat Free Sugar Free Instant Pudding

1 1/2 cups cold fat-free milk

1/4 teaspoon peppermint extract

2 cups thawed COOL WHIP Sugar Free Whipped Topping

1 ounce BAKER’S Semi-Sweet Chocolate, chopped

 

make it

1. Crush 2 wafers; sprinkle onto bottom of 9-inch pie plate sprayed with cooking spray.

2. Beat pudding mix, milk, and extract with whisk 2 minutes. Stir in COOL WHIP and chopped chocolate; spread onto bottom of pie plate. Top with remaining wafers, cut into quarters.

3. Freeze 6 hours, or until firm. Remove pie from freezer 10 minutes before serving; let stand at room temperature to soften slightly before cutting to serve.
